A Sushi Apprentice Shares Her Experience About Learning the Craft in New Series From Eater

In the first episode of the new Eater series “Shokunin“, host sushi chef David Bouhadana visits with sushi apprentice Oona Tempest at Tanoshi Sushi NYC, where she is studying the craft from master chef Toshio Oguma. Tempest takes her training very seriously, acknowledging the generations of sushi chefs that came before her.

When you’re at the sushi bar and you make a mistake the guilt for making the mistake is so much greater. It hits you and I’m more heavy place because it’s not your knowledge that you’re messing up, it is someoneelse’s knowledge abne someone else’s before that. So you learn something new every time. This is a life, not a job.
